Recipes made easy with Peppe Terra


  • 2 Ripe plantains
  • 4 Beef (or any meat you like) Sausages
  • 2cm ginger
  • 4 garlic cloves
  • 4 tbs Bread Crumbs
  • 1 Scotch Bonnet (Hot Fresh Chili)
  • 1/4 Red or Green Bell Pepper
  • 1/4 Onion
  • 1 tsp coriander
  • 1 tsp of Terra Curry Powder
  • 2 tsp of Peppe Terra

Oven Baked Sausage Plantain


  1. Preheat the oven to 185 degrees Celsius.
  2. To make it easier to mash the plantains, chop them first into very small cubes. In a large bowl, mash the plantain with a potato masher or a wooden spoon. Don’t over work it as you don’t want it to be too smooth.
  3. Finely chop all the vegetables and add to the bowl containing the mashed plantain.
  4. Remove the skins from the sausages and add to the plantain mixture.
  5. Add the breads crumbs, coriander, Terra Curry Powder and Peppe terra. Mix thoroughly.
  6. Roll the whole mixture as large sausage in baking paper or foil paper and bake for 30 minutes.
  7. serve this with egg sauce.
